Place the chicken into the sauce, wait for it to simmer. Cover the pot and keep the stove at low heat for the next forty-five minutes. You can also check on the meat after 35-40 minutes. If it shreds quickly, then it is already cooked.
Shred the meat and simmer until some of the liquid has evaporated. This will take about 5-10 minutes. If you want the carnitas to be very crispy, then cook until all the liquid is gone.
Finally, pan sear the meat and serve with some pita bread and the Mexican slaw.
